Fresh parsley is often used as a garnish for which dried can only a poor substitute. But no good cook ever wants to be caught without Parsley so some dried is usually kept to hand. There are many recipes that benefit from the addition of Parsley, which will infuse foods that might otherwise be cloying with a refreshing clean, green flavour.
This property makes it very useful to add to sandwich fillings that might have to be created some hours in advance of eating.
